Title: Applesauce-Spice Cake (Microwave)

3/4cButter or margarine
2 1/2cUnsifted all-purpose flour
2tsBaking soda
1tsGround cinnamon
1/2tsGround allspice
1 1/2cSugar
2lgEggs
2cApplesauce
3/4cChopped pecans or walnuts
1/2cChopped candied cherries
1/2cGolden raisins
2tbBrandy

GLAZE: 2 Tbl butter or margarine 3/4 cup confectioners' sugar 1/2 tsp vanilla extract Milk

Grease and flour a 12-cup microwave-safe Bundt pan. On waxed paper, soften butter on LOW, about 1 minute. In a bowl, mix flour with baking soda and spices. Cream butter with sugar in large bowl of an electric mixer. Beat in eggs, one at a time; beat in applesauce. In a small bowl, mix nuts, fruits, brandy, and 1/2 cup of the flour mixture. Stir remaining flour mixture into butter mixture until blended. Stir in fruit mixture. Pour into prepared pan. Place in microwave oven on an inverted microwave-safe bowl. Cook on MEDIUM for 10 minutes, rotating after 5 minutes. Cook on HIGH for 10 minutes, rotating every 3 minutes. Let stand for 15 minutes.

Make Glaze: In a glass bowl, melt butter on HIGH for 30 seconds. Stir in sugar, vanilla, and enough milk to make spoonable.

Invert cake onto plate, drizzle with glaze. If desired, garnish with pecan halves and candied cherries.

Makes 24 servings, 1 cup glaze.
